Heaven-Made Keto Waffle

Here's a list of what you will need:

  • 4 eggs, large

  • 4-ounce cream cheese (you can use heavy whipping cream as a substitute)

  • 1 tbsp erythritol or other sweetener

  • 2 tbsp butter

  • 1/2 cup almond flour

  • 1 tsp vanilla extract

  • 1 tsp baking powder

  • Sugar-free maple syrup, optional

Equipment you will need:

  • Blender

  • Waffle maker

This recipe is pretty straightforward.

Here's what to do:

  1. Pour all the ingredients into the blender. Blend until everything is well-incorporated. If you do not have a blender, you can mix all the ingredients into a bowl, adding the dry ingredients first before the wet ones. Incorporate everything using a spatula. Make sure there is no lump.

  2. Pre-heat your waffle iron and grease with a cooking spray or melted butter.

  3. Once the waffle iron is heated, pour the batter into the waffle iron, depending on the iron size. If you do not have a waffle iron, you can simply pour the mixture into a portion into a pan greased with butter or cooking spray.

  4. Cook until golden and crispy. Repeat the process until the batter is finished

In this recipe, each waffle yields 2 net carbs. It contains a total of 5 grams minus 1 gram fiber and 2 grams of sugar alcohol from the erythritol.

The Perfect Keto Waffles

What you will need:

  • 5 medium eggs

  • 4 tbs sweetener, granulated

  • 2 tsp vanilla

  • 1 tsp baking powder

  • 4 tbsp coconut flour

  • 1/4 butter, melted

  • 3 tbsp cream or full-fat milk

Here's what to do:

  1. In a bowl, separate the egg whites and egg yolk. Beat the egg whites until firm and form stiff peaks.

  2. In a separate bowl, mix the egg yolks, sweetener, baking powder, and coconut flour.

  3. Pour in vanilla and milk. Incorporate well.

  4. Then, using a spoon, fold the whisked egg whites into the egg yolk batter. Do not overmix. You want to keep as much of the air and fluffiness as possible.

  5. Pour enough batter into the warm, pre-heated waffle maker. Cook until golden and crispy.

  6. Repeat the process until all the mixture has been used.
